(Pole) An early ripening variety. The name ‘Corée de Sang Hoon’ translates from French into English roughly to be “Sang Hoon’s Korea”. It was brought back to Belgium by Korean chef Sang Hoon (San) Degeimbre of L’air du temps restaurant after a trip in Korea. 1 L’air du temps is a Michelin two star and green star restaurant located in the village Liernu in Éghezée, Belgium. 1, 2 At the L’air du temps, fresh vegetables for cooking are produced in their on-site gardens.
“Chef Sang Hoon Degeimbre brought back some of this bean seed after a trip in Korea. Our gardeners cultivated them and gave some seeds to bean collector, and from hand to hand, this bean is now very appreciated in Italy, Spain, US and now also Canada!” (Danila, L’air du temps Restaurant, 2025)
In 1998 Guy Dirix of Belgium received this variety from L’air du temps gardener Pascou (Pascal Moreau) of Stave, Belgium. It was introduced to Canada circa 2024.
