Meuch
(Pole) Meuch is an old variety from Switzerland of tremendous production. Fresh beans have green curved pods streaked with purple and small round beige seeds with black streaks and speckles. In the fresh stage it is outwardly similar to crochet, crochu, kipfler and anellini (‘little rings’ in Italian) beans. From a woman in Switzerland I learned that Meuch is an old Swiss variety and in Switzerland is considered a “proven variety that your grandmother was sure to have grown. […] Harvest them when pods are full, but not too late and bulging. You can even use the dry beans in soup to give it that characteristic Meuch flavour.” 1 (Zollinger Bio)
